Our little guy is nearing his 6th birthday year, and from very early on I can say that potatoes have been a really hard texture for my boy to enjoy. Just in this past year he has begun to enjoy French fries which is very exciting for me as this is my hands down favourite food! I have tried all sorts of preparations for my boy and the only one that has worked thus far that he will willingly eat is a Spanish style tortilla ..I prepare boiled peeled potato cubes and then proceed to sautée in lots of butter then cover with whisked egg and some sprinklings of feta cheese all baked up until firm and sliceable.
As this year has brought with it an appreciation of French fries for my little guy I thought to try out a new preparation of potato for him to try. I recalled the days when I was growing up when restaurants would offer potatoe skins as appetizers and thought this could be an excellent way to encourage our boy.
As well, my husband and I adore the English style of baked potatoe called Jacket Potatoes, baked potatoes poked and baked for hours and hours which produces this lovely think crunchy "jacket" of potatoe skin surrounding the fluffy potatoes interior. We then (as our English friends taught us) dollop tons of butter, hot baked beans, melted cheese, mixed can tuna fish and mayonnaise, and then sour cream, chives and tomatoe. Mmmmm. When we eat this meal our son will eat separately the baked beans, cheese and tuna preparation.
With these two thoughts in mind I decided to set aside some of the crunchy jacket potatoe skins whilst leaving a bit of a layer of the potatoe interior and prepare some cheesy melted bits for my boy. I loaded the skin slices with salty butter, shreded cheese and baked until they were all melted and crunchy. The very first time I served it to him he basically dived into them! He loved them and tells me that "THIS is the potatoes that I love Mama!" leaving me to wonder just why I didn't think of this ..say ..like years ago, oh well I will take it as a win!
