Every Wednesday we enjoy a take out lunch from a local Cafe that does beautifully fresh deli salads ..my boy eats his favorite tuna past shells and I get a salad combo plate. Much to my surprise while we were eating our special lunch one day ..my little boy reached over and grabbed up a fistful of the shredded carrot mix on my plate and nearly swallowed it whole! My eyes almost popped straight out of my head ..What in the crazy mixed up world was this??? my boy who would barely touch anything with a ten foot pole just ate a honkin HandFul of my raw carrots!
Ok nowadays it's no big deal ..every Wednesday he has his tuna pasta shells -and- an entire small bowl of his own Carrot Salad! I have also since mastered my own homemade Carrot salad recipe that is quite good and my boy eats it happily!
The other day while ticking Carrots off on my grocery list I noticed a pile of beautifully coloured heirloom Carrots ..and the thought occurred to me that this might be a good oppertunity to not challenge my boys taste buds but to challenge his colour sight association ..and hopefully throw him off a bit. I know that he has learned to love orange Carrots and he visually recognizes them, so my hope was to let him experience the same enjoyment of flavour in an unexpected colour ..yellow ..purple ..and his comfortable orange!
I peeled and finely shredded up the three coloured carrots on my box grater and made my marinade mix ..I first placed a mound of the dark purple carrot in the middle of the bowl and then covered it with the orange shredded carrot and finished off the top with sprinklings of the yellow Carrot. The idea was to have the orange Carrot be the main colour as he started to eat and then as he ate more the Orange would mix into the other colours and he would finish off eating purple Carrot.
I was very excited that he loved his Carrot salad enough to eat it all!!! ..strange purple colour Carrots included! The next few times I offer it I plan to slowly make all of the colours mix together into a beautiful rainbow Carrot salad ..and hopefully my little guys comfort with a purple or yellow carrot will transfer over to taking a curious taste of a yellow Wax Bean or maybe the humble purple Beet! and even more hopeful to slowly add cabbage and start a love of Coleslaw ..this Mom can only dream ..
