After doing a little <KALE TASTE TRIAL> that I posted a few weeks ago, I decided to try it out again with our soup lunch as I find soup goes well with a crunchy accompaniment ..and for the fact that I have jumped on the Kale Chip bandwagon because I actually really LoVe them and most especially since I started loading them with Sesame Seeds mmm!
I made a really delicious Red Lentil & Carrot soup and did as my Greek Father taught me to drizzle lentil soups with XV Olive oil, Red Wine Vinegar and sprinklings of Feta Cheese. My boy did not even touch the soup ..no single taste not even a glance of interest ..poor soup I actually felt sorry for it because it was so very good! I had a strong urge to push on my little guy to take a taste ..and my frustration started to build but ..after a very terrible lunch meal with my boy ..(that I will share in a future post soon) ..I have learned my lesson and stayed focused on the positive and utterly amazing fact that I think I can officially call my boy a Kale Chip eater Woo! A year ago I would have never dared to dream this could be possible.
Ok next goal : Kale Salad! we shall see how many years before we achieve that tall order!
<RECIPE>Red Lentil Carrot Soup - Slowly Sauté half of an Onion in butter with the lid on over medium low heat until softened - pour in 6 cups water or stock and 1 cup Red Lentil Beans - a pinch of Salt and ground Black Pepper and a Tablespoon of ground Cumin - Bring to Boil then lower to medium high cooking for 15 minutes - chop up half inch bits of half a Carrot - place at a strong simmer until Carrots are cooked through and the Lentil Beans are broken up and softened - adjust flavour with Salt-Pepper-and more ground Cumin if you like!
Finish the Soup with a drizzle of Olive Oil+Red Vinegar+Feta Cheese
note:this soup is also excellent finished off with some chopped up fresh Cilantro
