Our local grocery store always has a lovely stock of Enoki mushrooms that I love to sauté in brown butter. While I was preparing a platter of these long stem beauties my husband commented that the mushrooms looked like pasta ..and as I thought about it more I realized that they could be a perfect "foil" to possibly get my little guy to have a taste! As I plated his meal I placed the mushrooms in a little pile on his plate making it look as much as pasta as I could. Sure enough my pasta loving boy went in for a taste and we did our best to distract him telling him fun stories and he actually didn't spit it out -and- he took one more little tiny bite then gave up realizing it wasn't pasta ..hehe.
I would say it was a success and although he isn't officially eating and loving Mushrooms I know the more times he tries a taste the closer we will get to our goal.
<RECIPE> place 2 tablespoons of unsalted butter in a sauté pan and melt over medium high heat until the butter is a beautiful light brown with a fragrant toasted aroma - add a handful of Enoki mushrooms - sauté until the Mushroom stems just start to soften aprx 1 minute - finished with a sprinkling of crunchy Salt
