The other great thing about this way of preparing the eggplant is that my little guy can help all through the preparation from the easy to cut eggplant to the dipping and coating of the pieces ..which he has really loved.
After a few meals I started serving it over the buttery Spelt Couscous with a few spoons of quick fresh Tomatoe sauce, Feta and Basil. Oh my.. this meal is so gooood ..I am going to make this for the rest of my life !! the flavours are so fresh and simple. Ok so the only problem is that I have stumbled over a super 'keeper' meal but meanwhile my little boy has decided to stop eating it grrrrr. So now after a few totally refused meals and total digression on the tasting of eggplant ..I am going to go back to placing a nice bowl of the crunchy slices in the middle of the table for him to choose from on his own ..
<RECIPE>[The most delicious Can-Free Fresh Tomato Sauce] : chop up a whole fresh tomato - pour a bit of Olive Oil into a pan and set to high watching for when the Oil starts to move and swirl - have a lid and a bit of water in a glass handy - carefully and quickly put the fresh chopped Tomatoes into the hot Oil - immediately put on the lid and lower the heat to medium - open the lid and drop a few tablespoons of water over the tomatoes and replace the lid - simmer until it has become saucy - take off of heat and season with Salt to taste - Optional stir in some thinly sliced fresh basil
