While lingering in the Cheese section of our local grocery store, paroosing all of the local Quebec, European options as of late, I have often found myself hovering over the thick blocks of Halloumi Cheese .. being Greek and all .. and well, because I love it! My dear childhood friend who sadly passed away at the young age of eighteen whom I had spent so very much time with when I was a child in Greece used to make this for me for lunch on occasion, her and her brother would even hilariously fire it up with some Ouzo.
I have never dared to make it .. maybe for the memories maybe I don't want to lose my affection for this lovely cheese by cooking it wrong and scarring my love of it .. silliness I know!
I did a little research and started the preparations for our lunch to be had:
thick Greek style pita sauteed over medium heat in a pan with a bit of olive oil to give it those lovely oily crunchy edges and soft steamed centers + cucumber wedges + hummus in a puddle of more xvOlive Oil
.. and finally deciding to add to the experience by pulling from some of my cherished pottery bowls, filling one with the caramelized melt in the mouth cheesy Halloumi slices!
It turns out the Halloumi is nothing to be feared at all .. after dipping the slices into a puddle of xvOlive Oil I placed each slice into a hot medium high pan to sauté on each side until golden, no added salt needed just some fresh squeezed lemon juice and maybe some oregano sprinkles if desired. Having all of the other lunch items cooked, cut and at a set table .. allowed us to enjoy the beautiful meltingly oozey texture of the Halloumi straight off of the heat before it quickly firmed up as it cooled.
I do continue to try my best to keep extending my little guys tastes of various cheeses and felt pleased with this new possibility as an addition to our table. He contentedly enjoyed eating the stretchy bits of warm salty soft cheese .. Grilled Cheese .. Greek style.
