a new family addition to share/archive inspired by this recipe .. [no my little boy did not have a taste of this one] a lovely Lemon Kale salad So very very simple and Oh My! deliciously satisfying ..
I did not actually follow the recipe and did not use any of the suggested almonds .. and yet .. it still turned out to be a lemony green beauty of a dish!
- one bunch of frilly kale washed well, thick stems removed - 1/2 large lemon grated with a fine micro zester - roll up the kale leaves and slice in very thin shreds - with hands and fingers rub the shredded kale leaf with my favorite olive oil, a sprinkling of sea salt and the lemon zest - drizzle in some fresh lemon juice to taste - mix with fork and adjust lemon and salt to taste - with a micro zester shred a HUGE heaping mound of hard Greek Kasseri cheese [or pecorino romano] over the top -
.. having the cheese mounding in a huge soft pillowy pile over the top of the finely sliced and dressed kale salad as opposed to being all mixed in .. kept the cheese soft and [for lack of better grammar] un-smashed .. the whole eating experience danced on our palates .. it was devine!
