1 large zucchini sliced and layed out on a dish/each slice oiled and *very tiny sprinkling of salt
cook 1/4 red onion until very soft and slightly caramelized
2 garlic cloves medium
1 pound beef/pork/Turkey
1 cup passata or any kind of tomatoe fresh chopped/tinned etc
2 pints brown Cremini mushrooms -cut stir into meat and cook with meat
1 large bunch basil fresh and slightly chopped
1 tub (2cups ricotta)
1 1/2 cups mozzarella shredded
1/2 cup Parmesan grated
lay 1/3 of the zucchini slices .. saute meats and mushrooms and crushed garlic on medium high and mix in cooked onions
and tomato passata and ricotta - lay 1/2 of the meat mix over each of the zucchini layered dishes along with the basil leaves - then put another 1/3 zucchini - then the rest of the meat and basil divided - then the rest of the zucchini and top with mozzarella and Parmesan .. bake 350 until fork goes through like butter .. and bubby and brown ..
I also froze one dish uncooked and placed it in a cold oven from freezer and baked at 350 wondefully..
and Note: the cheese and the light sprinkling of salt onto the zucchini is sufficient for flavour no added salt is needed in the mix .. and as an alternate you could not salt the zucchini and just salt to taste the meat mix keeping in mind your cheese is salty too
