Yes I love bread and so does my little boy ...in an effort to have a more varied diet our family has slowly curbed our overall bread [gluten] consumption and have switched to various alternatives such as Spelt & Quinoa & Rice ...but we still partake in the lovely loaf from time to time.
I have been on a Mushroom kick lately and as I recently posted a<Mushroom Taste Trial> I have had the benefit of having realized some ways to get my little boys taste buds kick started to get him to taste the earthy beauty of the Mushroom.
On this particular day I was planning to make a quick and simple Mushroom soup and to prepare Gruyere grilled cheese on the side ...as I started the soup I imagined how lovely it would be with croutons and then realized that it could be even lovelier to turn the grilled cheese into a sort of crouton and leave out the second piece of bread ...and because my little boy is a bread lover I was crossing my fingers that instead of getting super angry that his beloved bread was in the soup ...that maybe he would spoon it out and eat it! Whether or not he ate the soup I hoped he would still be getting some of the lovely Mushroom flavour on his palate.
I waited until the last minute to place the Gruyere croutons on top of our soups so they would be nice and crunchy ...and sat down in nervous anticipation ...this was a keeper, my boy dug in happily! he did not touch the soup but I did make this again a few weeks later and he actually took one spoonful of the Mushroom soup as well as the Gruyere croutons! Oh Bread how I do love thee ..Oh let me count the many many ways...
<RECIPE> simple & tasty Mushroom Soup - Sauté one quarter of a medium sized onion diced on medium heat with 1 Tablespoon each of Butter + Olive Oil with the lid on until creamy and tender - Place 2 Cups mixed sliced and chopped Mushrooms [Shiitake+Oyster+Cremini] - Sauté until tender - Pour in one and a half cup Stock or Water and cover to let simmer for 20 minutes - remove pot and with a hand blender purée the soup until a smooth - Adjust Seasoning with Salt + Pepper to taste - Whisk in a bit of 35% Cream to lighten
